I'm rebrewing a great beer from pre-BM days. Nowadays the actual punk IPA recipe is available, but this clone came out so well I think I'm just going to rebrew adjusted to the BM - but which yeast to use - the original brew used S-04.


4.100 kg Pale Malt, Maris Otter (Thomas Fawcett) (5.0 EBC) Grain 2 100.0 %

11.00 g Chinook [12.30 %] - Boil 60.0 min Hop 3 19.3 IBUs
11.00 g Nelson Sauvin [12.30 %] - Boil 60.0 min Hop 4 19.3 IBUs
21.00 g Ahtanum [4.60 %] - Boil 15.0 min Hop 5 3.7 IBUs
11.00 g Simcoe [11.70 %] - Boil 10.0 min Hop 6 3.7 IBUs

14.00 g Chinook [12.30 %] - Steep/Whirlpool 0.0 min Hop 7 0.0 IBUs
14.00 g Nelson Sauvin [12.30 %] - Steep/Whirlpool 0.0 min Hop 8 0.0 IBUs
14.00 g Simcoe [11.70 %] - Steep/Whirlpool 0.0 min Hop 9 0.0 IBUs

I've got -

WLP028 Edinburgh Scottish Ale
WLP051 California V Ale
WLP090 San Diego Super

banked in the freezer - whaddya think?

With that amount of hops you might as well use Allinsons bread yeast because the yeast will not influence the taste. :lol:

I have a very simple house beer has comes VEEERY close with just 100g cascade. If anything it is a smidge hoppier.
