Belgian Ale yeast?.....I would have thought an english ale for that one.

It would also have been, but I had ordered the wrong yeast.

I am waiting tooo. I have a TOP recipe but much simpler than that - bloody good beer, but probably not as close as some might like.

Hey, it ended up being alc.7,8% (too high alc) and did not have enough flavor of caramel compared to the original Theakston Old Peruliar, but was a good beer as it was.
