Black IPA 3

Here is my Black IPA recipe for this weekend.

Recipe – Black IPA 3

OG – 1.062
FG – 1.012
ABV – 6.3%
IBU – 70
EBC – 80

Malt Bill

70% Golden Promise
10% Vienna Malt
5% Medium Crystal
2% Melanoiden Malt
2% Flaked Oats

8% Chocolate Malt
2% Chocolate Wheat
2% Roasted Barley

Mash Profile –

MI/20c
35c/20m – Glucon Rest (oats)
55c/15m – Protein Rest
63c/30m – Beta Peak
73c/30m – Alpha Peak
78c/30m – Mash Out and chocolate/roasted malts added

Hops

Bittering – Warrior @ 60m to 35ibu

Flavour – Simcoe/Amarillo @ 10m & 5m to 30ibu
Flavour & Aroma – Simcoe/Amarillo/Citra Whirlpooled 10mins to 10ibu

Aroma (Dry Hop) 6g/L – Simcoe/Amarillo/Citra for 7days @ 21c

Addition’s

400g Dextrose added 10mins of boil
Whirlfloc Tablet @ 10mins
Gypsum 15g

Fermented with WLP002 @ 19c – it’s a low attenuator at 70% but the mash profile and dextrose will see that get to >75%

The brew went pretty good.

Forgot to set the Glucon and Protien rests and ran a 45min Beta peak @ 63c followed by a 15m Alpha peak at 73c.

Got a higher than expected OG hitting 1.069 and upped the late hops on brewday to get 85ibu and got 21.5lts into the FV.

Here are the pictures of the mash out addition of the 12% roasted malts turning the colour from 29EBC to 88EBC :drink:

Wort looks great and I am sure the WLP002 will be ideal for this !

Your right, I dont think that it will be something that is missing from the beer when tasting time arrives. 8)

Checked the gravity yesterday and @ 60hrs ferment and it was at 1.028

I had a taste and it was very coffee/roasty like with a nice bittering but the hop flavours from late kettle and WP havent pulled through yet as it was on the sweet side.

Upped the temp to 22c to complete the fermentation and will dry hop on Saturday for 7-10days with and increase 56g of each hop....AHHH YEAH!!

Im hoping that the lower/longer 63c mash plus all that Dex will enable it to keep those yeastys working after a sluggish start from the under pitching.

I like to use Midnight Wheat in my Black IPA.

This gives a very blaack colour with no flavour.

I add a little bit of choc and no roasted barley.
