IBU of Speidel's recipe for Pilsner low?

Unread postby majk » Wed Oct 03, 2018 12:22 pm

Hello. I'm heading to my first brew and was thinking that to keep it easy I will start with the Speidel's Pilsner recipe -

23 l of brewing water to start with plus sparge water (6.85L)
4.0 kg Pilsner malt | 0.5 kg Wheat malt | 30 g Tettnang hops (4.2 % alpha)
20 g Tettnang hops › 70 min before end of boil
10 g Tettnang hops › 10 min before end of boil

I used BrewFather to calculate the details and spit out IBU at 14.. It feels rather low.

Did anyone tried this recipe - did it come out OK? Not sure If I did some mistake in calculations - If not, 14 feels rather low (I would aim at 25 -30) so should I adjust adjust the hops to
45 g Tettnang hops › 70 min before end of boil
10 g Tettnang hops › 10 min before end of boil

That should deliver 28 IBU?

Is that IBU from the packet or the numbers stored in your app?

Whatever the hop variety, IBU can change from season to season like any produce, so it might be lower or higher than what the app is saying.

FWIW Pilsners are quite low in IBUs anyway and assuming its a normal Pilsner grain bill, the flavour profile will come from how the yeast is managed - Healthy yeast count, good temp control across the stages - pitch, primary, d-rest & lager.

That IBU is from the app. Plan is to follow Speidel's suggestion.

23 l of brewing water to start with plus sparging water
4.0 kg Pilsner malt
0.5 kg Wheat malt
30 g Tettnang hops (4.2 % alpha)
1 packet Saflager S-23 yeast

So far, I had a few attempts with my 10 Litre Braumeister…

Malt:
German Pilsner Malt 1000 g
Lager Light Malt 1000 g
Vienna Malt 250 g
Wheat malt 250 g

Mash:
62 º C - Start (Mash-in)
62º C - 40 min
72º C - 30 min
78º C - 10 min

Boil: 100º C for 80 min

Hops:
Motueka 20 g - 60 min
15 g - 20 min
15 g - 10 min

Cool down to about 15º to 18 º C, then transfer to Fermenter.
Adding either WLP802 Budejovice, or Fermentis W 34/70.
Both work wonderful.

Ferment at about 18º C until Krausen starts. (about 12 hours, mostly less).
Then transfer into fridge at about 10º - 12º C until fermentation is finished (about 7 to 10 days)
Then clarify and transfer to Corny Kegs for storage.
Beer is already carbonated as I ferment under pressure (at about 20 PSI / 1.5 bar).
OG: about 11.5º to 12º Plato - FG: around 3.5º Plato.

Head and fragrance are marvellous, the taste beyond imagination… absolutely delicious.
Bitterness is just right, at least for me and the rest of the family.
From personal experience, I think the IBU is not higher than ~ 30 IBU, rather lower ?

Even, Brewer’s Friend IBU Calculator tells me otherwise ?

That is what I'm talking about - you have 20 g for 60 min + 30g at the end-ish for half sized batch....

Speidel is suggesting 30g of 4.2% AA at all - does not sounds right.
