Limoncello (BM sous vide)

Something a bit different for the long hot summer.....



Limoncello (BM sous vide)

GET BM ready, install the lower plate inverted to give you a platform.
Add enough water to cover the elements and the bag (1/3 fill) and set 57c (135f)

Method

Into a vac bag (sous vide or good zip lock bag)
• 1 litre vodka.
• Outermost skin of 10 (ten) lemons. Easy peel or zester but no pith

Place in the BM for 2 hours pump on.
Strain into a jug and add syrup to taste.

Method for syrup

While the bag is in, make the syprup.
Add a ratio of 1 part water to 1 part sugar v/v to a saucepan and heat.
As soon as everything is disolved (goes clear from misty) remove from heat.
Same as making brewers caramel - just stop quicker.

Serve on ice.....mmmm

sounds good. ive actually got a sous vide machine but have only ever done food.

Have you got a sealer that can seal liquids?

Yup.

Turn the vaccy down. OR use a cheapy bag sealer (with a band not a wire.)

ive got the regular vacuum sealer, but without a chamber sealer i cant see how you can remove the air without the liquid? for this does it need to be vacuumed sealed - i suppose you could seal by displacement in a regular zip bag if you keep the seal above the water line?

Can you adjust the vacuum on yours?

not really, choices are dry or moist, and normal and gentle.

You need the not too much vac setting..don't forget it doesn't have to get air tight, just sealed.
