Mexican Lager - Wai-iti hops?

Unread postby grooves » Mon May 21, 2018 2:31 pm

Has anyone here used Wai-iti hops? I've read they have a lime zest quality.

I'm about to brew up this recipe from White Labs / Pizza Port (https://www.whitelabs.com/recipes/pilsn ... ican-lager) but I'm thinking of swapping Liberty hops for Wai-iti. Wai-iti is the grand-dauaghter of Liberty, so it won't be too far away, but perhaps have more lime than lemon character.

Using a 10 litre Braumeister.
I have used two additions of 15 g Wai-iti for aroma at 20 min and 10 min
in combination with 20 g of Nelson Sauvin for bittering at 60 min.
Yeast:WLP 802 Budejovice.
The result was an outstanding Lager with a nice array of citrus characteristics.

Recently, I have replaced Wai-iti and Nelson Sauvin with Motueka.

Personally, this is hard to beat and will become my favourite Lager.

Ok - thanks that gives me the confidence to swap out Libery for Wai-iti.

Thanks for the tip on Motueka - I remember it was the best of the bunch in a collection of single hopped IPAs from BrewDog.

Now I just need to get my hands on some WLP940 yeast and I'm ready to go.
