Winter Solstice Stout

Today is the Winter Solstice, the shortest day of the year, to celebrate I am brewing a Stout with a bit of a twist because I will also be entering half this batch into the Wierd Beer category of a competition later in the year :D This will be an overnight mash, no-chill, split-batch to be fermented in the New Year, one batch will be fairly 'normal' and fermented with WLP028 Edinburgh, the other batch will be fermented with WLP644 Saccharomyces "Bruxellensis" Trois.

This will also be my first Stout at brew number 28 :oops: so I have no idea how it will turn out, a complete experiment and a lot of fun :shock:

Here are the ingredients

Munich Malt
Oats, Malted
Caramel/Crystal Malt
Roasted Barley
Wheat Malt, Bel
Chocolate Malt
Special B Malt
Black (Patent) Malt
Cacoa powder
Milk Sugar (Lactose)
To brew or not to brew, that would be a stupid question !
