Rye IPA recipe ideas

Unread postby mattp94 » Fri May 15, 2015 8:45 am

There is a brewery in London that produces a rye IPA called 8 ball (apparently the name came from their use of pool balls to weigh down the hops when they were dry hopping their experimental brew). Anyway, I love this beer and I'm keen to try and attempt a clone of it. Their website offers some insight into what its made with:
Malt: Pale, Rye, Crystal Rye, Caragold, Caramalt, low colour Crystal
Hop: Columbus, Citra, Galaxy, Vic Secret, Pacific Jade
6.2% abv
65 IBU
The breweries description is "A big chunk of rye is used to give the beer a spicy, earthiness, mashed up with cara malts to create a rich, bold mouthfeel. Zesty southern hemisphere and american hops are used in abundance to balance the residual sweet malt character. Masses of dry hops are plied after fermentation to spike a wild blend of tropical, spicy aromas."

I have tried searching for recipes online and only found one other person attempting to make a clone of this where they believed that there was around 20% rye in the grist and most of the hops were very late in the boil. Their recipe went something like this:

Code: Select all
6.5% abv
61 IBU

3.72 kg Pale Malt (2 Row) US (3.9 EBC) Grain 1 62.2 %
1.17 kg Rye Malt (9.3 EBC) Grain 2 19.6 %
0.37 kg Caragold Malt (11.8 EBC) Grain 3 6.2 %
0.36 kg Caramalt (31.5 EBC) Grain 4 6.0 %
0.36 kg Crystal Rye Malt (108.3 EBC) Grain 5 6.0 %

8.57 g Columbus (Tomahawk) [14.00 %] - Boil 60.0 min Hop 6 16.9 IBUs
8.57 g Magnum [14.00 %] - Boil 60.0 min Hop 7 16.9 IBUs
12.24 g Cascade [7.50 %] - Boil 30.0 min Hop 8 6.6 IBUs
12.24 g Cascade [7.50 %] - Boil 20.0 min Hop 9 4.4 IBUs
12.24 g Citra [12.00 %] - Boil 10.0 min Hop 10 4.2 IBUs
12.24 g Galaxy [14.00 %] - Boil 10.0 min Hop 11 4.8 IBUs
12.24 g Citra [12.00 %] - Boil 5.0 min Hop 12 3.5 IBUs
12.24 g Galaxy [14.00 %] - Boil 5.0 min Hop 13 4.0 IBUs
27.66 g Cascade [7.50 %] - Boil 0.0 min Hop 14 0.0 IBUs
27.66 g Citra [12.00 %] - Boil 0.0 min Hop 15 0.0 IBUs
27.66 g Galaxy [14.00 %] - Boil 0.0 min Hop 16 0.0 IBUs

Ferment with Safale US-05

27.66 g Citra [12.00 %] - Dry Hop 7.0 Days Hop 18 0.0 IBUs
27.66 g Galaxy [14.00 %] - Dry Hop 7.0 Days Hop 19 0.0 IBUs

The obvious difference being that this recipe is using some Magnum for bittering and none of the Vic Secret or Pacific Jade.
My thoughts were to perhaps use some of the Colombus and Pacific Jade for bittering then more Colombus, Galaxy, Pacific Jade and Citra for the late hops and dry hop additions.

We are fortunate to have some very knowledgeable brewers on this forum so I would like to ask peoples opinion as the original poster never returned to say how the brew turned out.
Does anyone have a recipe for a good rye IPA that they would like to share?

Thanks
Matt

I guess that the Beavertown 8 ball may not be widely available so In have had a go at formulating a recipe which I hope will get me somewhere close.
It uses just over 6kg of grain and with 20% Rye I am a little concerned that I could get the dreaded wort fountains. I intend to use 1% oat husks and a short rest at 40°C and 50°C and a full volume mash circa 30 litres to try and help reduce this.
I would be very grateful for any comments regarding either the recipe or method.

Thanks

Matt

Well I eventually brewed the following recipe back on 27th May.

0.34 kg Caramalt (31.5 EBC) Grain 5 6.0 %
0.25 kg Crystal Rye Malt (108.3 EBC) Grain 6 4.4 %

Boil Ingredients
Amt    Name    Type    #    %/IBU

10.00 g Columbus (Tomahawk) [16.8 %] - Boil 30.0 min Hop 7 12.2 IBUs

10.00 g Pacific Jade [12.5 %] - Boil 10.0 min Hop 12 3.5 IBUs
20.00 g Citra [12.00 %] - Boil 5.0 min Hop 13 6 IBUs
15.00 g Columbus (Tomahawk) [16.8 %] - Boil 5.0 min Hop 14 6 IBUs
15.00 g Galaxy [14.10 %] - Boil 5.0 min Hop 15 5.5 IBUs
20.00 g Pacific Jade [12.5 %] - Boil 5.0 min Hop 16 5.9 IBUs

Steeped Hops

30.00 g Vic Secret [15.90 %] - Steep/Whirlpool 0.0 min Hop 17 0.0 IBUs
20.00 g Citra [12.70 %] - Steep/Whirlpool 0.0 min Hop 18 0.0 IBUs
20.00 g Galaxy [14.10 %] - Steep/Whirlpool 0.0 min Hop 19 0.0 IBUs

Dry Hop

40.00 g Citra [12.50 %] - Dry Hop 3.0 Days Hop 21 0.0 IBUs
40.00 g Galaxy [14.10 %] - Dry Hop 3.0 Days Hop 22 0.0 IBUs
40.00 g Vic Secret [15.90 %] - Dry Hop 3.0 Days Hop 23 0.0 IBUs

The brew day went well and fermentation was finished after around 2 weeks at 18°C with some US-05 yeast. It then went into the cony keg and has been slowly carbonating for the past couple of weeks.

I haven't been able to get hold of another original 8-Ball Rye IPA but I'm certainly not disappointed with this effort. There is a pleasant dry bitterness and a big punch of wonderful hop aroma and flavour, possible even a little too much as it seems to overpower some of the rye flavour.

Although the beer tastes absolutely great it hasn't cleared like most of my previous beers have. I suspect this may have been due to the amount of dry hop pellets I used, 120g in total for a fermentation volume of 17 litres. I don't know if the rye would have also had an effect.

Here is the final result in a half glass as it was a lunchtime refreshment and at 6.5% I shouldn't really have too much.

Looks fantastic dude.

I've been toying with the idea of a Rye IPA recipe for a while now... might have to give this one a try!

Anything you'd do differently next time? I noticed you mentioned the hops overpowered the rye flavour?

Thanks for sharing the recipe!

I do think the hops have somewhat overpowered the rye flavour but for the next brew I don't think I would change a thing. It really is a thoroughly enjoyable beer. Had a couple of friends round one night last week and the tap on this corny was definitely the most popular, I'll have to make another one soon as the keg is now feely worryingly light. I might try reducing the steeped hops a little for a future brew day but I do like the big flavour of this one even if it isn't quite what I had planned.

Nice one Matt.

I'll probably give this one a go either this weekend, or the one after - will post up my results!

After going to a beer festival Friday / Saturday last weekend I feel the need to add a Rye IPA to my 'To Brew' list...
I might have a go at yours if you don't mind?
