Hefeweizen Step Mash schedule

Brewing a Hefeweizen soon and am curious if anyone can recommend a mash schedule. The Wheat recipe on Speidel shows the following:

Mash programme
1 50°C Start mashing
2 52°C 0min
3 63°C 15min
4 73°C 35min
5 78°C 15min
6 Boiling 80min

Anyone go with this schedule or shoul I make any adjustments. Thanks for any advice.

Hi

The schedule I used on recent brew. More potluck than science.

Mash in at 38c
20 min at 59C
35 min at 63C
5 min at 68C
20 min at 72C
Mash out 10 min at 78C

Been in keg for 5 weeks now. First taste this weekend.

My go to wheat beer mash schedule (award winning Weizen!)...

43C for 20 mins (Ferulic acid rest)
67C for 60 mins (saccrification rest)
77C for 20 mins (mash out)
