Hi folks,
Yesterday I brewed a Peroni clone, I hope it would be great... I bought a car's sunshade to make a jacket for the braumeister, and yesterday I cut it to fit the BM, and honestly I was impressed with the boiling... Anyway I think it would be even better with more jackets, thus I will buy one more, to improve the jacket with two sunshades, and I will let you know how it works...

By the way, I did a PH of 5.3 for the mash, and the wort become very clear....

Just to finish the story, it is the starter I made that is dark because I use DME 100 EBC. I could not find pale DME, but I used it before and I decant it so only through the yeast into the wort....

And the wort pitched at 60ºF (16ºC), but the freezer is set to 53ºF (12ºC), so I will ferment at 53ºF for 14 days, and then I will do dyacetil rest for 2 days and bring temps down to 32ºF.

Thanks for sharing! I see that you repurposed a piece of the sunshade to cover the probe of your temperature controller.

What's in the bottle for the blow off?

I use Iodophore on the blowoff bottle.....it is on a 1 tablespoon/1.5 gallon water.

Just an update of the carboy....It has 24 hours since was pitched and already has a Krausen and a good fermentation.
