Manual Pump Operation

If I run the pump in manual mode, will it automatically do a pump rest?

don't think so. i run it manually when cooling with immersion chiller, and there's no rest that i've ever seen!

No it won't. I believe the pump rests during mash are to let the grist settle so as to avoid channeling if it were run 100%.
I do as dinnerstick does - run for the whole chilling time, and it stays on.
