Hey all,

I have been lurking on this form for a while, and active regularly. I have built business plans based solely around BM in the United States, and still plan to go legal with a BM in the future. Currently, at home I run a bm20. I haven't been active over the past 6 months or so, as I spent around 1000 hours apprenticing at a local start up, brewing on a 15 bbl brewhouse into 30 bbl fermenters. Now that I am finished with the apprenticeship I hope to be more active on here while I attempt to launch my own facility.

Barrel aged beers using wild microbs are defiantly where my heart lies. I have been using the BM to help create these at home, especially preacidifying in the kettle before transferring and pitching yeast. It is a great tool for this job. Almost a "kettle sour" technique, but rarely do I burn off my lactobacillus any more, I like to keep it alive.

Most of my brewing goes into 60L (15 gallon) used whiskey barrels. I have one that I removed the top head and use as a primary fermenter. Everything passes through this, before going to another barrel for maturation. Fruiting happens in 60L speidel plastic fermenters, after maturation is complete.
