heady topper is a truly delicious double (or whatever) ipa. they sometimes have it (flown in, and very expensive) at the bierkoning in amsterdam, fresh and close to brew date, and kept refrigerated as a hoppy beer should be. it's damn good. i have no idea why the can gives the stupid advice to drink it from the can, but i don't care! worth a try some time.

This was a great video. Something interesting that he spoke about that I didn't know was keeping your PH level around 5.1, and saying anything from 5.4 and up will give a dull beer. Putting this theory into practice now :)
